Ingredients of the tres leches coffee cake
This is a variation on the old tres leches chocolate cake recipe, which will delight coffee drinkers. Take note of its ingredients:

- 4 eggs.
- 340 gr. of flour for pancakes.
- 90 gr. of regular flour.
- 250 gr. of refined sugar.
- 3/4 cup of vegetable oil.
- 325 millilitres of milk.
- 1 teaspoon of vanilla essence
- 1 cup of evaporated milk.
- 1/2 cup of cold coffee (3 tablespoons of soluble coffee in 1/2 cup of boiling water).
- 1 cup of condensed milk.
- 1/2 cup of liquid cream.
- Chantilly cream.
Preparation of the tres leches coffee cake
As with almost any pastry recipe, to make our tres leches cake with coffee, we will start by preheating the oven to 180 °C.
In a bowl, we will beat the eggs with our hand blender together with the sugar until they double in volume and become a pale yellow colour. In the meantime, add the vegetable oil in the form of a thread without stopping beating and the teaspoon of essence or vanilla extract.
Sift the two types of flour (the commonly used and the prefabricated flour for hotcakes) into a container and mix until the two flours are unified. Add 1/3 of the flour to the egg, oil and essence mixture.
While you are mixing, add half of the milk, another third of the flour and follow this procedure until you finish with the flour and the milk. Mix well until the mixture is free of any lumps.
Grease and sprinkle a cake mould with flour; now, pour our mixture into the container and bake at 170 °C for 30 minutes or until, when inserting a toothpick in the centre, it comes out clean.
During this baking process, you will prepare the filling for the tres leches coffee cake.
In a container, you will add: the cup of evaporated milk; 1/2 cup of cold coffee or, failing that, 3 spoonfuls of soluble coffee in 1/2 cup of boiling water; the cup of condensed milk and finally the half cup of liquid cream. Mix well until the ingredients are combined and leave to rest until the cake is ready.
Once the cake is cooked, remove it from the oven and without removing it from the mould, you will start chopping or sinking the tip of the knife into different parts of the cake until it reaches the bottom of the mould. Let it rest for a few minutes and pour the milk mixture over it.
To finish, just let it cool down to room temperature and then transfer it to the fridge. We recommend that you refrigerate it for at least two hours, after which you can remove the mould and decorate it with whipped cream.
Traditional tres leches cake
If, in your case, you don’t have any mixes for hotcakes, the preparation you will see below is the basic recipe for a normal homemade tres leches cake but adapted to add the magic ingredient of our section: coffee.
Ingredients of the traditional tres leches coffee cake
(Quantities for 10-12 servings)
For the classic tres leches cake:
- 2 cups of all-purpose flour.
- 1 cup of milk.
- 5 eggs.
- 2 teaspoons of baking powder
- Vanilla extract (1 teaspoon)
- 6 tablespoons of butter.
- 2 cups of sugar.
- 1/2 teaspoon of salt.
For the mixture, tres leches:
- Can of condensed milk.
- 1 can of evaporated milk.
- A can of cream.
- 1/2 teaspoon vanilla extract.
- 5 tablespoons of coffee or very strong espresso.
For the icing:
- 2 egg whites.
- 1/2 teaspoon of cream of tartar.
- 1/2 cup of sugar.
- 1/4 cup of water.
- 1/2 teaspoon vanilla extract.
How to prepare a homemade tres leches coffee cake
We start by preheating the oven to 200º C. In a baking tin in the shape you want, you will grease and flour it.
In a bowl, mix the baking powder with the wheat flour and salt.
Meanwhile, in a small pot, you will heat the milk with butter. Remove from the heat and set aside.
Now, in a large bowl, you will beat the eggs with an electric mixer at high speed for 2 minutes; add the sugar and continue mixing for another 5 minutes. Reduce the speed and add to the mixture in small portions the flour mixture interspersed with the butter and milk mixture. Add the vanilla extract, and mix for another 1 minute.
Pour the baking mixture into your greased pan for 40 to 45 minutes or until the toothpick test comes out clean. Remove the cake from the oven, and with a fork or the tip of a knife, you will make holes in the top of the cake. Let it rest for about 15 minutes.
In the meantime, you will prepare the milk mixture, for that you must beat: the condensed milk, the evaporated milk, the cream, the coffee and the vanilla extract in a bowl. Mix everything well until all the milk is mixed and the coffee is homogeneous.
Finally, pour the tres leches sauce over the warm cake. Refrigerate for at least two hours, or even better if you have time, leave the cake overnight.
We make the icing
For the final glaze, in a small pot, mix the water and sugar over medium heat, constantly stirring for about 5 minutes. Remove from the heat and set aside.
In a bowl, beat the egg whites with the cream of tartar until they form hard peaks. Now without stopping beating the egg whites, add the sugar syrup and continue beating for another 5 minutes. Add the vanilla extract or essence and mix for another minute.
Before eating, spread the icing on the cake and refrigerate until ready to serve.
