We will start the pork tenderloin to coffee by preparing our double espresso in the coffee machine you have available. You can use any other coffee, but we recommend a double espresso for a better result in this recipe.

Then pour it into a bowl and add the spoonful of sugar, the crushed garlic, the chopped chilli pepper without seeds and a spoonful of chopped rosemary.

Note: To make the garlic taste more powerful, always crush the garlic: this process allows the internal juices of the garlic flavour to stand out.

Now add the sliced meat, stir and leave to marinate for at least 2 hours. The longer you keep it marinating, the tastier it will be.

  • 50 gr. of fresh oregano.
  • 1 kilo of pork tenderloin.
  • 50 gr. of fresh thyme.
  • 200 gr. of onion
  • 3 cloves of garlic
  • oil
  • Salt

  • 200 gr. of soluble coffee.
  • 100 gr. of honey
  • Vanilla essence or extract.
  • Water.

Note: As with the previous preparation, you can also make this same dish with pork loin. We recommend the sirloin because it will always be a little juicier.

How to make the recipe for tenderloin with coffee candy

We will start by preheating the oven to 190 °C.  And then, in the blender, we will blend these ingredients: thyme, oregano, onion and garlic until we obtain a thick, spicy sauce. You can do it by hand with a blender, if you prefer, but the more the mixture is crushed, the better the final result will be.

We will then marinate our pork tenderloin in this mixture. Minimum 2 hours, if it can be a little more then better.

Note: The secret of a juicy taste and tender meat is due to the time one leaves the meat with the spices. The longer we let our meats marinate, the more flavour our meat dishes will acquire.

When the stipulated time has passed, we will cook the sirloin in the frying pan with a little oil. Salt and pepper the meat on both sides. Put the fire on high, because the idea is that it will simply brown on the outside, we don’t need to cook it completely yet. If you make it too much, then it will dry out inside the oven.

In the same frying pan or in a container suitable for the oven we are going to bake the sirloin (already golden in the frying pan), but before inserting it in our oven you are going to prepare a sauce with the coffee, the honey, the water and the trickle of the vanilla essence. Mix well and add it to the sirloin.

Now, take the meat to the oven and cook it at a medium temperature.

Note: We recommend you to bathe or brush the meat with the sauce constantly, this process will allow the sauce and the sirloin to acquire the caramelized consistency that we want.

Remove from the oven and leave to stand for a few minutes before serving.
