We will start by preheating the oven to 190 °C. And then, in the blender, we will blend these ingredients: thyme, oregano, onion and garlic until we obtain a thick, spicy sauce. You can do it by hand with a blender if you prefer, but the more the mixture is crushed, the better the final result will be.
We will then marinate our pork tenderloin in this mixture. Minimum 2 hours, if it can be a little more than better.

In the same frying pan or in a container suitable for the oven, we are going to bake the sirloin (already golden in the frying pan). Still, before inserting it in our oven, you are going to prepare a sauce with the coffee, the honey, the water and the trickle of the vanilla essence. Mix well and add it to the sirloin.
Now, take the meat to the oven and cook it at a medium temperature.
Note: We recommend you to bathe or brush the meat with the sauce constantly; this process will allow the sauce and the sirloin to acquire the caramelized consistency that we want.
Remove from the oven and leave to stand for a few minutes before serving.
