Ingredients of the coffee chicken

(For 4 portions approximately)

  • 4 chicken quarters.
  • 1 cup of concentrated coffee.
  • Onion
  • 1/2 lemon
  • Butter.
  • 150 ml. 0% light cream (or liquid cooking cream).
  • Freshly ground pepper.
  • Rosemary to taste.
  • 4 small tomatoes.
  • Salt to taste.
  • 1 spoonful of Worcestershire sauce.
  • The peel of an orange.
  • 1 spoonful of brown sugar
  • A glass of camomile wine.

How to make chicken with coffee sauce

Start by preheating the oven to about 180 °C.

In the meantime, julienne the onions and chop the tomatoes (you can leave the skin on the tomatoes and seeds).

Clean the chicken of fat and residues.

NOTE: When you finish cleaning the chicken on the kitchen table, for reasons of hygiene and your own health and that of your family, remember to clean the utensils used with vinegar, lemon or chlorine.

Then, in a frying pan with a trickle of oil, brown the chicken and onion, add salt and pepper to taste on both sides of the chicken, let it be well soaked. Now, add two spoonfuls of butter to the pan with the chicken and onion, cover it with a plate and a weight on top and cook it until it browns on both sides.

Remove from the heat when it has a nice colour on both sides. Set aside.

For the coffee sauce 

To prepare the sauce for this coffee chicken recipe, we will cook the tomato in a pan with a little oil until it is soft; when it has this consistency, we will add the onion that we have sautéed with the chicken. Cover and leave to cook for 10 minutes on low heat.

After 10 minutes, uncover and add the rosemary, lemon juice, Worcestershire sauce, coffee and sugar. Mix well and let all the flavours come together for about 5 minutes. Once this time has passed, add the wine and a little water. Let it cook for about 10 minutes or until all the ingredients are undone.

To finish our sauce for the coffee chicken recipe, we will pass the sauce through the processor, through the blender or through the potato masher (whatever you have at home) so that it does not lose colour and has a fine texture.

Once the chicken is golden and the coffee sauce is ready, in a container suitable for the oven, we will cook our chicken with the sauce that we will cover with aluminium foil well closed so that all the aromas are preserved. Cook it at 180 °C. for about 40 minutes or when it is so tender that the meat is prepared from the bone.

  • 6 chicken thighs.
  • 1 large onion
  • beef broth
  • A cup of coffee (beverage) already prepared.

How to make coffee chicken thighs (with onions)

Start by seasoning the chicken thighs with salt and pepper; lightly flour them and fry them in satin over high heat with a little olive oil until they are golden.

Cut the onion into julienne strips and add it to the pan with the chicken; leave everything to simmer for about 15 minutes, occasionally stirring so that two sides of the chicken are cooked evenly.

When the onion starts to take on colour, add the 250 ml of meat stock, and cook over high heat. Always stir the contents.

As soon as the chicken starts to cling to the bottom of the pan and the onion has browned as the liquid evaporates, add the cup of coffee and mix it well with the liquids at the bottom of the pan. Let it cook for a few minutes until the stew comes to a boil again, which by this time will be really chicken with coffee.
